Lately, I’ve been looking for any excuse (or none at all) to throw pretzels into everything sweet.
Pretzel chocolate chip cookies? Yes, please. Caramel pretzel cheesecake, duh. Beer and pretzel truffles, are you kidding me?! Pretzels dipped in PB and covered in mini chocolate chips…for a snack, while you’re making granola bars? It feels right.
I just can’t get over this salty/sweet combo. We’re so happy together.
These Peanut Butter Pretzel Granola Bars are no exception. Whip up a batch and you have a healthy snack to curb the afternoon munchies.
They couldn’t be easier to throw together and you probably have most of the ingredients already in your pantry.
Plus, you know exactly what’s going into them. No weird additives, preservatives, or ingredients you can’t pronounce.
I subbed coconut oil for some of the butter. By the way, have you heard of this stuff? I go through vats of it like it’s candy. Not only can you cook and bake with it, but it also does wonders for your skin and hair. Use it as a skin moisturizer or a conditioning mask for your hair. Seriously. Do it.
The granola bars are the perfect balance of crunchy (from the pretzels), chewy (from the oats and honey), and nutty (from the pb). You can feel good about packing these in school lunches or for yourself!
